This book represents recipes from a small segment of households in souther India, particularly Chennai.. It grew out of an interest in watching and learning to cook from aunt and her cook, Malathi. Many of the dishes in the book were made for during stay with them, and in attempting to set it out in the form of a book, I may not have been able to capture one essential ingredient-a loving quality with which they were made. In appreciation of that, I dedicate this effort to them.
The Iyer is a vegetarian. His meal is, for the most part, simple and mild. Most of the vegetables are pressure cooked or cooked on low heat. Oil is used sparingly, and spices reflect the mildness-a very small amount of chillies being used. You are free to increase the amount to suit your palate. The Iyer is also bound in a lot of religious practice. This is a very light meal and may often be made up of a snack only.
